Well, Hello There!

Look what I found today. We went out in search of early signs of spring and yes, we found it! Very strange indeed.
I was very tired this evening and needed a break from the twice weekly trips to ballet class with Kaiya. So Tait took her and I stayed home with the two littles. It was nice. I made lentil soup for our supper and a loaf of this bread. We went outside while it cooked, which is when we found the daffodils. Just the three of us, which meant no bickering, thank goodness. Perhaps all the bickering that's been going on was what I really needed a break from.

No sooner had I finished photographing the flowers and turned my back, River plucked the heads off!

This soup is really delicious, by the way. My friend made it for one of our Friday Waldorf get togethers a few weeks ago and I had to have it again. It makes a bunch so we'll be having it for lunch tomorrow, too.

Oh how lovely to see some daffodils, I'm Welsh - It's our national flower. We are literally snowed up to the eyeballs so I don't expect to see any daffs here for quite some time!! I have lots of lentil soup recipes so i'm going to add this one to the collection. Bon appetit!

We didn't get one single snowflake this winter. :( So I'm glad to move on and welcome spring, now!

Only I use different cheese and plain milk. Last night I threw in chopped pepperoni. To say that they were devoured would be an understatement. (: They were a compliment to the ver spinachy crustless quiche that we had for dinner. Can I say right now how thrilled I am that my youngest loved it (and that my oldest tolerated it enough for seconds - poor growth-spurting boy that he is)?

Oh, how you tempt me, Melissa. Those look amazing! I'm wondering if I can make the with vegan cheese for Kaiya...... Well, if nothing else, there will be a secret batch made for me. :)

it has become a favorite around here, and i love that it is easy, quick, and hearty (we don't add the cheesy bread on top).

i can't believe how warm it is right now. we went to the park yesterday to enjoy the warm weather, and one of the spring-flowering trees was in bloom!

We made the greatest sandwiches last weekend -- mash up a couple peaches and stir in a quarter cup of finely chopped pistachios. Spread on sandwiches. We used canned peaches cuz none of the fresh ones were soft enough, but it was still so yummy we're keeping the recipe to make this summer when we can use fresh peaches!

Wow! That certainly sounds interesting. And intriguing. I may just have to try it.

I'm not yet ready to give up on winter, halfway through it though we may be. I do love spring, but I think it's even better when it comes after a snowy winter.
As for in our kitchen, there's been lots of requests for healthy snacks lately, seaweed chips and sweet potato chips. yum! http://onebyonebyone.blogspot.com/2012/01/healthy...

Oh, yes, spring feels much deserved after a cold and snowy winter. But our winter here in NC has stayed mostly between 40-60 all winter (60-70 the past wk). Very few cold days and not one flake of snow. :(
I must try those chip recipes. I love sweet potato chips!
